Ingredients

  • 1 pound of chicken breast, diced
  • 1 pack of potato gnocchi (about 16 ounces)
  • 1 cup of frozen mixed vegetables (peas, carrots, corn)
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups of chicken broth
  • 1 cup of heavy cream
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat, add chicken, season, and sauté until golden brown (5-7 minutes).
  2. Add chopped onions and minced garlic, cooking for another 2-3 minutes.
  3. Pour in chicken broth, stir, and bring to a gentle boil.
  4. Add gnocchi and frozen vegetables, stir, reduce heat to low, and simmer for 5 minutes.
  5. Pour in heavy cream, add thyme, and stir until combined.
  6. Simmer for an additional 5 minutes, adjust seasoning if needed, and serve hot garnished with fresh parsley.
