- 1 pound of chicken breast, diced
- 1 pack of potato gnocchi (about 16 ounces)
- 1 cup of frozen mixed vegetables (peas, carrots, corn)
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 4 cups of chicken broth
- 1 cup of heavy cream
- 2 tablespoons of olive oil
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat, add chicken, season, and sauté until golden brown (5-7 minutes).
- Add chopped onions and minced garlic, cooking for another 2-3 minutes.
- Pour in chicken broth, stir, and bring to a gentle boil.
- Add gnocchi and frozen vegetables, stir, reduce heat to low, and simmer for 5 minutes.
- Pour in heavy cream, add thyme, and stir until combined.
- Simmer for an additional 5 minutes, adjust seasoning if needed, and serve hot garnished with fresh parsley.
Notes
- Feel free to use any mixed vegetables you prefer.
- This dish can be stored in the refrigerator for up to 3 days.
