- 12 ounces pasta (penne or fusilli work great)
- 2 tablespoons olive oil
- 3 cloves garlic (minced)
- 1 cup cherry tomatoes (halved)
- 1 cup fresh spinach
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- to taste Salt
- to taste Pepper
- for garnish Fresh basil (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Stir in cherry tomatoes and cook for an additional 2-3 minutes until they start to soften.
- Add the pasta, heavy cream, and Italian seasoning. Pour in enough water to cover the pasta, and season with salt and pepper.
- Bring the mixture to a boil. Reduce heat to low and simmer, stirring occasionally until the pasta is tender, about 10-12 minutes.
- Once the pasta is cooked, stir in the spinach and Parmesan cheese until melted and creamy.
- Serve hot, garnished with fresh basil if desired.
