  • 12 oz pasta (like penne or rotini)
  • 1 can (15 oz) crushed tomatoes
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • to taste Salt and pepper
  • for serving Grated Parmesan cheese
  • for garnish Fresh basil leaves

Instructions

  • In a large pot, heat a splash of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  • Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Pour in the crushed tomatoes and vegetable broth, stirring to combine.
  • Add the pasta, dried basil, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer, covered, for about 10-12 minutes.
  • Once the pasta is cooked, stir in the heavy cream. Let it simmer for another 2-3 minutes until thickened.
  • Serve with grated Parmesan cheese and fresh basil on top.
