- 12 oz pasta (like penne or rotini)
- 1 can (15 oz) crushed tomatoes
- 1 cup vegetable broth
- 1 cup heavy cream
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- to taste Salt and pepper
- for serving Grated Parmesan cheese
- for garnish Fresh basil leaves
Instructions
- In a large pot, heat a splash of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Pour in the crushed tomatoes and vegetable broth, stirring to combine.
- Add the pasta, dried basil, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer, covered, for about 10-12 minutes.
- Once the pasta is cooked, stir in the heavy cream. Let it simmer for another 2-3 minutes until thickened.
- Serve with grated Parmesan cheese and fresh basil on top.
