One Pot Creamy Cajun Chicken Orzo

  • 1 lb chicken breast (diced)
  • 1 cup uncooked orzo pasta
  • 2 tbsp Cajun seasoning (adjust to taste)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 1 medium bell pepper (diced)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tbsp olive oil
  • Salt and pepper (to taste)
  • Fresh parsley (for garnish)

Instructions

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and bell pepper, cooking until they're soft, about 3-4 minutes.
  • Add the diced chicken to the pot and season with Cajun seasoning, salt, and pepper. Cook until the chicken is browned, about 5-6 minutes.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Add the uncooked orzo and chicken broth to the pot. Bring to a boil, then reduce the heat to low. Cover and simmer for about 10-12 minutes until the orzo is tender.
  • Once the orzo is cooked, stir in the heavy cream. Cook for an additional 2-3 minutes until everything is heated through and creamy.
