- 1 lb chicken breast (diced)
- 1 cup uncooked orzo pasta
- 2 tbsp Cajun seasoning (adjust to taste)
- 1 medium onion (chopped)
- 3 cloves garlic (minced)
- 1 medium bell pepper (diced)
- 2 cups chicken broth
- 1 cup heavy cream
- 1 tbsp olive oil
- Salt and pepper (to taste)
- Fresh parsley (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and bell pepper, cooking until they're soft, about 3-4 minutes.
- Add the diced chicken to the pot and season with Cajun seasoning, salt, and pepper. Cook until the chicken is browned, about 5-6 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the uncooked orzo and chicken broth to the pot. Bring to a boil, then reduce the heat to low. Cover and simmer for about 10-12 minutes until the orzo is tender.
- Once the orzo is cooked, stir in the heavy cream. Cook for an additional 2-3 minutes until everything is heated through and creamy.
- Garnish with fresh parsley before serving, and enjoy your delicious meal!
