- 4 pieces boneless, skinless chicken breasts (or thighs)
- 2 tablespoons olive oil
- 2 pieces lemons (juiced)
- 1 piece lemon (zested)
- 2 teaspoons dried oregano
- 2 teaspoons dried thyme
- 3 cloves garlic (minced)
- to taste Salt and pepper
- 1 cup cherry tomatoes (halved)
- 1 cup green beans (trimmed)
- for garnish Fresh parsley
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the olive oil, lemon juice, lemon zest, oregano, thyme, minced garlic, salt, and pepper.
- Add the chicken breasts to the bowl and coat them evenly with the marinade. Let them sit for about 15 minutes.
- Heat an oven-safe skillet over medium-high heat. Once hot, add the marinated chicken breasts and sear each side for about 3-4 minutes.
- Add the cherry tomatoes and green beans around the chicken in the pan. Pour any leftover marinade over the top.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Remove from the oven and let rest for 5 minutes. Garnish with fresh parsley before serving.
