- 4 fillets salmon (about 6 ounces each)
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 3 cloves garlic (minced)
- 1 large lemon (juice and zest)
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/4 cup fresh parsley (chopped for garnish)
- 2 cups vegetables (like asparagus or green beans)
Instructions
- Preheat your oven to 400°F (200°C).
- Season the salmon fillets with salt and pepper on both sides, and set them aside.
- In a large oven-safe skillet, heat olive oil over medium heat. Sauté the minced garlic for about 30 seconds.
- Add the salmon fillets to the skillet, skin-side down, and sear for 3-4 minutes.
- Carefully flip the fillets, then add the butter, lemon juice, and lemon zest.
- Toss in your chosen vegetables around the salmon.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes.
- Garnish with fresh parsley before serving.
