  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 3 cloves garlic (minced)
  • 1 large lemon (juice and zest)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 cup fresh parsley (chopped for garnish)
  • 2 cups vegetables (like asparagus or green beans)

Instructions

  • Preheat your oven to 400°F (200°C).
  • Season the salmon fillets with salt and pepper on both sides, and set them aside.
  • In a large oven-safe skillet, heat olive oil over medium heat. Sauté the minced garlic for about 30 seconds.
  • Add the salmon fillets to the skillet, skin-side down, and sear for 3-4 minutes.
  • Carefully flip the fillets, then add the butter, lemon juice, and lemon zest.
  • Toss in your chosen vegetables around the salmon.
  • Transfer the skillet to the preheated oven and bake for 10-12 minutes.
  • Garnish with fresh parsley before serving.
