- 4 pieces boneless, skinless chicken breasts
- 2 cups broccoli florets
- 1 cup carrots, sliced
- 1 piece bell pepper, chopped (any color)
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- to taste Salt and pepper
- 1 piece lemon, juiced
- to taste Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C). Grab a large oven-safe skillet or a baking dish.
- In the skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Season the chicken breasts with salt, pepper, and Italian seasoning. Place them in the skillet and cook for about 5 minutes on each side until golden brown.
- Add the broccoli, carrots, and bell pepper around the chicken in the skillet. Drizzle the vegetables with the remaining 2 tablespoons of melted butter and lemon juice.
- Transfer the skillet to the preheated oven. Bake for 20-25 minutes, until the chicken is cooked through and the vegetables are tender.
- Garnish with fresh parsley before serving. Enjoy your delicious one-pan meal!
