- 1 cup grated zucchini (about 1 medium zucchini)
- 1/2 cup vegetable oil (or melted coconut oil)
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour (or whole wheat flour)
- 1/3 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional, but highly recommended)
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish (8×8 inches) or line it with parchment paper.
- In a large bowl, combine the grated zucchini, oil, and sugar. Mix well until combined.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
- If using chocolate chips, fold them into the batter.
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the brownies cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
