Instructions
- Preheat your oven to 350°F (175°C).
- Grate the zucchini and squeeze out excess moisture.
- In a bowl, mix olive oil, sugar, and eggs until smooth.
- Fold in the grated zucchini.
- In another bowl, combine flour, baking powder, baking soda, salt, and garlic powder; gradually add to the wet mixture.
- Fold in the shredded cheese.
- Pour the batter into a greased loaf pan and bake for 50 minutes or until a toothpick comes out clean.
