  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar (packed)
  • 1/4 cup unsalted butter (melted)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup Nutella (plus extra for swirling)

Instructions

  • Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well to prevent sticking.
  • In a large bowl, mash the ripe bananas with a fork until mostly smooth. A few small lumps are fine for texture.
  • Add the granulated sugar, brown sugar, melted butter, egg, and vanilla extract to the mashed bananas. Stir everything together until just combined.
  • In a separate medium bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt. This ensures even distribution of dry ingredients.
  • Gradually add the dry ingredients to the wet ingredients. Mix just until no dry streaks of flour remain. Be careful not to overmix.
  • Fill each prepared muffin cup about two-thirds full with the muffin batter.
  • Dollop about a teaspoon of Nutella on top of each muffin. Use a toothpick or a small knife to gently swirl the Nutella into the batter for a marbled effect.
  • Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Baking times may vary by oven.
