- 1 ½ cups crushed graham crackers
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 cups fresh strawberries, hulled and sliced
- optional additional strawberries for topping
Instructions
- Start by preparing the crust. In a bowl, mix the crushed graham crackers and melted butter until well combined. Press this mixture into the bottom of a 9×9-inch baking dish.
- Next, make the filling. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until fully combined.
- In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined.
- Now, layer the sliced strawberries on top of the crust. Pour the cream cheese filling over the strawberries, smoothing the top with a spatula.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or until set. If you can, let them chill overnight for the best results.
- Once chilled, cut into bars and serve with additional strawberry slices on top, if desired. Enjoy!
