  • 1 ½ cups graham cracker crumbs
  • ½ cup sticks unsalted butter, melted
  • ⅓ cup sugar
  • 2 cups heavy whipping cream
  • 1 can (14 oz) sweetened condensed milk
  • ½ cup key lime juice
  • 1 teaspoon grated lime zest (optional)
  • pinch salt

Instructions

  • In a bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined.
  • Press the mixture into the bottom of mini pie pans or muffin tins to form the crust. Chill in the refrigerator for about 10 minutes.
  • In another bowl, whip the heavy cream until stiff peaks form. Gently fold in the sweetened condensed milk, key lime juice, lime zest, and salt.
  • Fill each crust with the lime filling. Smooth the top with a spatula.
  • Chill the mini pies in the refrigerator for at least 3 hours, or until set.
  • Once ready, garnish with extra whipped cream and lime slices before serving. Enjoy!
