Ingredients

  • 1 cup rolled oats
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 1/4 cup mini chocolate chips (optional)
  • Extra shredded coconut for rolling (optional)

Instructions

  • In a large mixing bowl, combine the rolled oats, shredded coconut, almond butter, honey (or maple syrup), lemon zest, lemon juice, and salt. Mix everything until well combined.
  • If you’re adding chocolate chips, fold them in now. You can also mix in any other ingredients you might like, such as chia seeds or dried fruit.
  • Once everything is mixed, refrigerate the mixture for about 30 minutes. This helps it firm up, making it easier to roll.
  • After chilling, scoop out about a tablespoon of the mixture and roll it into a ball. If you’d like, roll the balls in extra shredded coconut for a nice finish.
  • Place the energy balls on a parchment-lined baking sheet and repeat until all the mixture is used.
  • Store the energy balls in an airtight container in the fridge for up to a week or in the freezer for up to three months.
