Ingredients

  • 4 boneless, skinless chicken fillets
  • 1 cup mushrooms, finely chopped
  • ½ cup cream cheese, softened
  • 1 cup spinach, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • ½ cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a skillet, sauté garlic, then add mushrooms and spinach until tender.
  2. Mix cream cheese, thyme, salt, and pepper into the cooled mushroom mixture.
  3. Slice pockets into each chicken fillet without cutting through.
  4. Stuff each chicken pocket with the mushroom filling and secure with toothpicks if needed.
  5. Sear the stuffed chicken in an oven-safe skillet until golden brown on both sides.
  6. Bake in a preheated oven at 375°F (190°C) for 20 minutes or until cooked through.

Notes

  • Use a meat thermometer to ensure chicken is cooked to 165°F (74°C).
