- 4 boneless, skinless chicken fillets
- 1 cup mushrooms, finely chopped
- ½ cup cream cheese, softened
- 1 cup spinach, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon olive oil
- Salt and pepper to taste
- ½ cup grated Parmesan cheese
Instructions
- Heat olive oil in a skillet, sauté garlic, then add mushrooms and spinach until tender.
- Mix cream cheese, thyme, salt, and pepper into the cooled mushroom mixture.
- Slice pockets into each chicken fillet without cutting through.
- Stuff each chicken pocket with the mushroom filling and secure with toothpicks if needed.
- Sear the stuffed chicken in an oven-safe skillet until golden brown on both sides.
- Bake in a preheated oven at 375°F (190°C) for 20 minutes or until cooked through.
Notes
- Use a meat thermometer to ensure chicken is cooked to 165°F (74°C).
- Feel free to add other vegetables to the filling if desired.
