Ingredients

- 2 cups of fresh mushrooms (sliced)
- 1 cup of mozzarella cheese (shredded)
- 1 cup of ricotta cheese
- 1 cup of spinach (fresh or frozen)
- 3 cloves of garlic (minced)
- 1 teaspoon of Italian seasoning
- Salt and pepper to taste
- 2 tablespoons of olive oil
- 1 cup of marinara sauce
- Fresh basil for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Sauté minced garlic in olive oil, then add mushrooms and spinach, cooking until tender. Season with salt, pepper, and Italian seasoning.
- Mix ricotta cheese with a pinch of salt and pepper.
- In a baking dish, layer marinara sauce, half the sautéed vegetables, half the ricotta, and half the mozzarella. Repeat layers.
- Cover with foil and bake for 20 minutes, then uncover and bake for an additional 10 minutes until cheese is bubbling and golden.
Notes
- For a spicier kick, add red pepper flakes to the sautéed vegetables.
- This dish can be made ahead of time and baked just before serving.
