Ingredients

  • 2 cups of fresh mushrooms (sliced)
  • 1 cup of mozzarella cheese (shredded)
  • 1 cup of ricotta cheese
  • 1 cup of spinach (fresh or frozen)
  • 3 cloves of garlic (minced)
  • 1 teaspoon of Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • 1 cup of marinara sauce
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté minced garlic in olive oil, then add mushrooms and spinach, cooking until tender. Season with salt, pepper, and Italian seasoning.
  3. Mix ricotta cheese with a pinch of salt and pepper.
  4. In a baking dish, layer marinara sauce, half the sautéed vegetables, half the ricotta, and half the mozzarella. Repeat layers.
  5. Cover with foil and bake for 20 minutes, then uncover and bake for an additional 10 minutes until cheese is bubbling and golden.

Notes

  • For a spicier kick, add red pepper flakes to the sautéed vegetables.
  • This dish can be made ahead of time and baked just before serving.
