A creamy shrimp pasta dish loaded with mushrooms and garlic, perfect for a quick dinner.

Ingredients

  • 8 ounces fettuccine or spaghetti
  • 1 pound large shrimp, peeled and deveined
  • 2 cups sliced mushrooms (button or cremini work well)
  • 4 cloves garlic, minced
  • 1/2 cup chicken or vegetable broth
  • 1/4 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Boil salted water and cook pasta until al dente, then drain.
  2. In a skillet, heat olive oil and butter, sauté shrimp for 2-3 minutes, season, and set aside.
  3. Add mushrooms to the skillet, cook for 5 minutes, then add garlic and cook for 1 more minute.
  4. Return shrimp to the skillet, add broth and cream, and simmer for 2-3 minutes.
  5. Toss cooked pasta in the skillet until coated, adding pasta water if needed, and garnish with parsley.

Notes

  • For a spicier dish, add red pepper flakes when sautéing the shrimp.
  • Feel free to substitute shrimp with chicken or tofu for a different protein.
