Ingredients

- 8 ounces fettuccine or spaghetti
- 1 pound large shrimp, peeled and deveined
- 2 cups sliced mushrooms (button or cremini work well)
- 4 cloves garlic, minced
- 1/2 cup chicken or vegetable broth
- 1/4 cup heavy cream
- 2 tablespoons olive oil
- 1 tablespoon butter
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Boil salted water and cook pasta until al dente, then drain.
- In a skillet, heat olive oil and butter, sauté shrimp for 2-3 minutes, season, and set aside.
- Add mushrooms to the skillet, cook for 5 minutes, then add garlic and cook for 1 more minute.
- Return shrimp to the skillet, add broth and cream, and simmer for 2-3 minutes.
- Toss cooked pasta in the skillet until coated, adding pasta water if needed, and garnish with parsley.
Notes
- For a spicier dish, add red pepper flakes when sautéing the shrimp.
- Feel free to substitute shrimp with chicken or tofu for a different protein.
