  • 2 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1 cup shredded Monterey Jack cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season chicken breasts with salt, pepper, and paprika, then cook in a skillet until golden brown. Remove and set aside.
  2. Sauté chopped onion and bell pepper in the same skillet until soft, then add minced garlic and cook for 1 minute.
  3. Add orzo pasta and chicken broth, stir, bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Slice cooked chicken and return it to the skillet, adding cherry tomatoes and Italian seasoning; cook for an additional 5 minutes.
  5. Sprinkle Monterey Jack cheese on top, cover until melted, then serve garnished with fresh parsley.
