- 2 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 1 cup shredded Monterey Jack cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season chicken breasts with salt, pepper, and paprika, then cook in a skillet until golden brown. Remove and set aside.
- Sauté chopped onion and bell pepper in the same skillet until soft, then add minced garlic and cook for 1 minute.
- Add orzo pasta and chicken broth, stir, bring to a boil, then reduce heat and simmer for 10 minutes.
- Slice cooked chicken and return it to the skillet, adding cherry tomatoes and Italian seasoning; cook for an additional 5 minutes.
- Sprinkle Monterey Jack cheese on top, cover until melted, then serve garnished with fresh parsley.

- Make sure to not overcook the chicken to keep it juicy.
