- 2 cups grated zucchini (about 2 medium zucchinis)
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon salt
- 1 cup sugar (can substitute with brown sugar)
- ½ cup vegetable oil (or melted coconut oil)
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, combine the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Mix well.
- In another bowl, whisk together the sugar, oil, eggs, and vanilla until well blended.
- Add the grated zucchini to the wet ingredients and stir until combined.
- Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
- If you’re adding nuts or chocolate chips, fold them in gently at this stage.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
