- 2 fillets black cod (about 6 ounces each)
- 1/4 cup white miso paste
- 3 tablespoons mirin (Japanese rice wine)
- 2 tablespoons sugar
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 4 cups mixed sesame greens (like bok choy, kale, or spinach)
- 1 tablespoon sesame seeds (for garnish)
- to taste salt and pepper
Instructions
- In a bowl, mix the miso paste, mirin, sugar, and soy sauce until smooth. Place the cod fillets in a shallow dish and cover them with the marinade.
- Refrigerate for at least 30 minutes, ideally a couple of hours for better flavor.
- Preheat your oven to 400°F (200°C). Remove the cod from the marinade and place it on a lined baking sheet.
- Bake for about 12-15 minutes until the fish is opaque and flakes easily with a fork.
- While the cod is baking, heat the sesame oil in a pan over medium heat. Add the sesame greens and sauté for about 3-5 minutes, seasoning with salt and pepper.
- Once the cod is done, serve it atop the sesame greens, garnishing with sesame seeds.
