- 1 large cucumber (diced (English cucumbers work well))
- 1/2 cup red onion (finely diced)
- 1/4 cup fresh parsley (chopped)
- 1/4 cup feta cheese (crumbled (optional))
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon honey
- Salt and pepper (to taste)
Instructions
- Start by washing all your vegetables thoroughly.
- In a large mixing bowl, combine the diced cucumber, halved mini sweet peppers, diced red onion, and chopped parsley.
- In a separate small bowl, whisk together the olive oil, red wine vinegar, honey, and a pinch of salt and pepper.
- Pour the dressing over the salad mixture and toss gently to coat.
- Sprinkle the crumbled feta cheese on top.
- Let the salad sit for about 10 minutes before serving.
