- 1 cup of graham cracker crumbs
- 1/4 cup of unsalted butter, melted
- 1/2 cup of granulated sugar
- 2 large eggs
- 1/2 cup of fresh lemon juice
- 1 tablespoon of lemon zest
- 1/4 teaspoon of salt
- 2 large egg whites
- 1/4 teaspoon of cream of tartar
- 1/2 cup of powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter; press into mini muffin tin and bake for 5 minutes. Let cool.
- Whisk together sugar, eggs, lemon juice, zest, and salt; pour into crusts. Bake for 10 minutes until set but jiggly. Cool completely.
- Beat egg whites and cream of tartar until soft peaks form; gradually add powdered sugar until glossy and stiff peaks form.
- Pipe or spread meringue over cooled lemon filling and bake for an additional 5 minutes until golden brown.
