These Mini German Pancakes are light, fluffy, and perfect for breakfast!

Ingredients

  • 1 cup of milk
  • 1 cup of all-purpose flour
  • 6 large eggs
  • 1/4 cup of granulated sugar
  • 1/2 teaspoon of vanilla extract
  • 1/4 teaspoon of salt
  • 1/4 cup of unsalted butter (melted)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Grease a muffin tin with cooking spray or butter.
  3. In a large bowl, mix together milk, flour, eggs, sugar, vanilla extract, and salt until smooth.
  4. Stir in the melted butter until fully incorporated.
  5. Pour the batter into the muffin tin, filling each cup halfway, and bake for 12-15 minutes until puffed and golden.
  6. Remove from oven, cool slightly, and serve warm with toppings.
