Here’s what you’ll need to whip up these delicious Mini Beef Wellington Bites:

  • 1 pound of beef tenderloin, cut into small cubes
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup of mushrooms, finely chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 package of puff pastry (thawed)
  • 1 egg (beaten, for egg wash)

Instructions

  1. Heat olive oil in a skillet and sear seasoned beef cubes for 2-3 minutes, then let cool.
  2. Sauté chopped mushrooms and minced garlic in the same skillet for 5-7 minutes, then stir in Dijon mustard.
  3. Roll out puff pastry to 1/8 inch thick and cut into 3-inch squares.
  4. Place mushroom mixture and a piece of beef in the center of each pastry square, fold and seal.
  5. Brush with beaten egg and bake at 400°F (200°C) for 20-25 minutes until golden.
