- 2 cups cooked pasta (rotini or penne)
- 1 can (15 ounces) sweet corn, drained
- 1 red bell pepper, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh cilantro, chopped
- 3 tablespoons mayonnaise
- 2 tablespoons sour cream
- 1 juice of 1 lime
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to the package instructions, then drain and rinse under cold water.
- In a large bowl, combine the cooked pasta, sweet corn, diced red bell pepper, red onion, feta cheese, and cilantro.
- In another bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
- Pour the dressing over the pasta mixture, tossing to coat everything evenly.
- Cover and refrigerate for at least 30 minutes before serving for the flavors to meld.
