  • 1 can (15 ounces) sweet corn, drained
  • 1 red bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh cilantro, chopped
  • 3 tablespoons mayonnaise
  • 2 tablespoons sour cream
  • 1 juice of 1 lime
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  • Cook the pasta according to the package instructions, then drain and rinse under cold water.
  • In a large bowl, combine the cooked pasta, sweet corn, diced red bell pepper, red onion, feta cheese, and cilantro.
  • In another bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
  • Pour the dressing over the pasta mixture, tossing to coat everything evenly.
