- 8 oz pasta (spaghetti or penne work well)
- 1 5 oz can tuna (drained)
- 1/2 cup black or green olives (pitted and sliced)
- 1/4 cup olive oil
- 2 cloves garlic (minced)
- 1 tablespoon lemon juice
- 1/4 teaspoon red pepper flakes
- Salt to taste
- Pepper to taste
- 1/4 cup fresh parsley (chopped)
- Optional Grated Parmesan cheese (for serving)
Instructions
- Cook the pasta according to the package directions, salting the water generously.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat.
- Add minced garlic and sauté for about 1 minute until fragrant.
- Drain the tuna and add it to the skillet, stirring to combine.
- Add sliced olives, red pepper flakes, and lemon juice, then simmer for 2 minutes.
- Once the pasta is cooked, drain it and add it to the skillet with the tuna mixture.
- Toss everything together, season with salt and pepper, and add fresh parsley.
- Serve hot, topped with grated Parmesan if desired.
