- 4 medium sweet potatoes
- 1 cup cooked quinoa
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1/2 cup feta cheese, crumbled (or a vegan alternative)
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin

Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Wash and dry the sweet potatoes. Poke holes in them with a fork.
- Place the sweet potatoes on the baking sheet and bake for about 45-50 minutes, until they are tender.
- While the potatoes are baking, prepare the filling. In a large bowl, combine the cooked quinoa, chickpeas, cherry tomatoes, red onion, feta cheese, parsley, olive oil, garlic powder, cumin, salt, and pepper.
- Once the sweet potatoes are done, let them cool for a few minutes. Cut them in half lengthwise and scoop out a bit of the flesh to create a boat.
- Mix the scooped sweet potato flesh into the filling mixture. Stir well to combine.
- Stuff the sweet potato halves with the filling generously. Return to the oven for another 10-15 minutes.
- Once heated through, take them out, garnish with additional parsley, and serve warm!
