  • 4 medium sweet potatoes
  • 1 cup cooked quinoa
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup feta cheese, crumbled (or a vegan alternative)
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • to taste Salt and pepper

Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Wash and dry the sweet potatoes. Poke holes in them with a fork.
  • Place the sweet potatoes on the baking sheet and bake for about 45-50 minutes, until they are tender.
  • While the potatoes are baking, prepare the filling. In a large bowl, combine the cooked quinoa, chickpeas, cherry tomatoes, red onion, feta cheese, parsley, olive oil, garlic powder, cumin, salt, and pepper.
  • Once the sweet potatoes are done, let them cool for a few minutes. Cut them in half lengthwise and scoop out a bit of the flesh to create a boat.
  • Mix the scooped sweet potato flesh into the filling mixture. Stir well to combine.
  • Stuff the sweet potato halves with the filling generously. Return to the oven for another 10-15 minutes.
  • Once heated through, take them out, garnish with additional parsley, and serve warm!
