- 8 oz pasta (spaghetti or penne works well)
- 2 cups fresh spinach (roughly chopped)
- 1 cup olives (sliced, Kalamata or green, your choice)
- 3 cloves garlic (minced)
- 1/4 cup olive oil
- 1/2 tsp red pepper flakes (optional, for a kick)
- Salt and pepper (to taste)
- Parmesan cheese (grated, for serving)
- Fresh basil (chopped, for garnish)
Instructions
- Start by boiling a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Next, toss in the chopped spinach and cook until wilted, about 2-3 minutes.
- Add the olives and red pepper flakes, stirring everything together for another minute.
- Now, add the drained pasta to the skillet, along with a splash of the reserved pasta water. Toss everything together until well combined. Season with salt and pepper to taste.
- Serve hot, garnished with grated Parmesan and fresh basil. Enjoy!
