- 1 cup orzo pasta
- 1 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 1/2 cup Kalamata olives, pitted and sliced
- 1/4 cup red onion, finely chopped

- 1/4 cup olive oil
- 2 tablespoons red wine vinegar

Instructions
- Start by cooking the orzo according to the package instructions. Typically, this takes about 8-10 minutes. Make sure to stir occasionally to prevent sticking.
- While the orzo cooks, prepare the dressing. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
- Once the orzo is cooked, drain it and rinse it under cold water to cool it down. This also helps stop the cooking process.
- In a large bowl, combine the cooled orzo, cherry tomatoes, feta cheese, olives, red onion, and parsley.
- Drizzle the dressing over the salad. Toss everything gently to combine. You want to ensure all the flavors mingle without breaking the feta too much.
- Let it sit for about 10 minutes before serving. This allows the flavors to develop beautifully.
