  • 4 fillets cod
  • 2 cups diced tomatoes (canned or fresh)
  • 1 cup fresh basil leaves (chopped)
  • 2 cloves garlic (minced)
  • 1 small onion (diced)
  • 2 tbsp olive oil
  • to taste Salt and pepper
  • 1 tsp dried oregano
  • 1/2 cup grated Parmesan cheese (optional)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat the olive oil over medium heat. Add diced onions and sauté until they become translucent, about 5 minutes.
  • Add minced garlic and cook for another 30 seconds until fragrant.
  • Stir in the diced tomatoes, salt, pepper, and oregano. Bring to a simmer and let it cook for about 10 minutes.
  • Once the sauce has thickened slightly, stir in the chopped basil.
  • Place the cod fillets in a baking dish and pour the tomato basil sauce over the fillets.
  • Bake for about 20-25 minutes, or until the fish flakes easily with a fork.
  • If desired, sprinkle Parmesan cheese on top for the last 5 minutes of baking.
