- 4 fillets cod
- 2 cups diced tomatoes (canned or fresh)
- 1 cup fresh basil leaves (chopped)
- 2 cloves garlic (minced)
- 1 small onion (diced)
- 2 tbsp olive oil
- to taste Salt and pepper
- 1 tsp dried oregano
- 1/2 cup grated Parmesan cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add diced onions and sauté until they become translucent, about 5 minutes.
- Add minced garlic and cook for another 30 seconds until fragrant.
- Stir in the diced tomatoes, salt, pepper, and oregano. Bring to a simmer and let it cook for about 10 minutes.
- Once the sauce has thickened slightly, stir in the chopped basil.
- Place the cod fillets in a baking dish and pour the tomato basil sauce over the fillets.
- Bake for about 20-25 minutes, or until the fish flakes easily with a fork.
- If desired, sprinkle Parmesan cheese on top for the last 5 minutes of baking.
