  • 2 cups cooked chicken breast (shredded or diced)
  • 4 large whole wheat tortillas or pita breads
  • 1 cup cucumber (diced)
  • 1 cup cherry tomatoes (halved)
  • 1 cup bell peppers (sliced (any color))
  • 1/2 medium red onion (thinly sliced)
  • 1/2 cup feta cheese (crumbled)
  • 1/4 cup olives (sliced (kalamata or green))
  • 1/4 cup hummus (store-bought or homemade)
  • 1/4 cup tzatziki sauce
  • to taste Salt and pepper

Instructions

  • Start by prepping your ingredients. Dice the cucumbers, halve the cherry tomatoes, and slice the bell peppers and red onion.
  • In a large bowl, combine the cooked chicken, diced veggies, olives, and feta cheese. Toss everything together gently.
  • Lay out your whole wheat tortillas or pita breads on a clean surface. Spread a generous layer of hummus on each tortilla, followed by a drizzle of tzatziki.
  • Spoon the chicken and veggie mixture onto each tortilla, distributing it evenly. Be careful not to overfill them!
  • Season with salt and pepper to taste. Fold in the sides of the tortilla and roll it up tightly from the bottom to the top.
  • For a warm wrap, grill them in a pan over medium heat for about 2-3 minutes on each side until golden brown.
  • Slice the wraps in half and serve immediately.
