  • 4 fillets cod (about 6 ounces each)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup green olives (pitted and sliced)
  • 1/4 cup red onion (thinly sliced)
  • 3 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup olive oil
  • to taste salt and pepper
  • 1/4 cup fresh parsley (chopped, for garnish)

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large baking dish, combine the cherry tomatoes, olives, red onion, garlic, oregano, and red pepper flakes. Drizzle with half of the olive oil and season with salt and pepper. Toss everything together until well mixed.
  • Make space in the middle of the vegetable mixture for the cod fillets. Place the cod fillets in the dish and drizzle the remaining olive oil over them. Season with salt and pepper.
  • Bake in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork and is opaque.
  • Once done, remove from the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.
