- 1 cup crushed graham crackers
- 1 cup sweetened shredded coconut
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/4 cup fresh lime juice
- 2–3 tbsp tequila (or lime juice for a non-alcoholic version)
- 1 zest of 1 lime
- extra shredded coconut (for coating)
Instructions
- In a bowl, mix the crushed graham crackers, shredded coconut, cream cheese, powdered sugar, lime juice, tequila, and lime zest. Blend until well combined.
- Cover the bowl and refrigerate for about 30 minutes to firm up the mixture.
- Roll the mixture into small balls, about 1-inch in diameter.
- Roll each ball in extra shredded coconut to coat.
- Place the coated balls onto a plate and refrigerate for at least another hour before serving.
- Serve chilled and enjoy!
