Ingredients

  • 1 cup crushed graham crackers
  • 1 cup sweetened shredded coconut
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 cup fresh lime juice
  • 23 tbsp tequila (or lime juice for a non-alcoholic version)
  • 1 zest of 1 lime
  • extra shredded coconut (for coating)

Instructions

  • In a bowl, mix the crushed graham crackers, shredded coconut, cream cheese, powdered sugar, lime juice, tequila, and lime zest. Blend until well combined.
  • Cover the bowl and refrigerate for about 30 minutes to firm up the mixture.
  • Roll the mixture into small balls, about 1-inch in diameter.
  • Roll each ball in extra shredded coconut to coat.
  • Place the coated balls onto a plate and refrigerate for at least another hour before serving.
  • Serve chilled and enjoy!
