- 2 cups broccoli florets
- 2 cups baby carrots
- 1 cup cherry tomatoes
- 1 lemon wedges (for serving, optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together the maple syrup, Dijon mustard, olive oil, minced garlic, salt, and pepper to create the glaze.
- On a large baking sheet lined with parchment paper, arrange the salmon fillets in the center. Surround them with broccoli florets, baby carrots, and cherry tomatoes.
- Brush the glaze generously over the salmon and drizzle any remaining glaze over the vegetables.
- Bake for 15-20 minutes, or until the salmon flakes easily with a fork and the veggies are tender.
- Serve hot, garnished with lemon wedges if desired.
