  • 4 pieces boneless chicken breasts
  • 1/2 cup pure maple syrup
  • 1/4 cup soy sauce
  • 2 cups coconut milk
  • 1 cup jasmine rice
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • for garnish Chopped green onions
  • for garnish Sesame seeds (optional)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a bowl, mix the maple syrup, soy sauce, garlic powder, salt, and pepper.
  • Place the chicken breasts in a baking dish and pour the marinade over them.
  • Bake the chicken for 25-30 minutes until cooked through.
  • Rinse the jasmine rice under cold water until clear.
  • In a medium pot, combine rinsed rice and coconut milk. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 15-20 minutes.
  • Let the chicken rest for a few minutes before slicing.
  • Serve the sliced chicken with coconut rice, garnished with green onions and sesame seeds.
