- 4 pieces boneless chicken breasts
- 1/2 cup pure maple syrup
- 1/4 cup soy sauce
- 2 cups coconut milk
- 1 cup jasmine rice
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- to taste Salt and pepper
- for garnish Chopped green onions
- for garnish Sesame seeds (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the maple syrup, soy sauce, garlic powder, salt, and pepper.
- Place the chicken breasts in a baking dish and pour the marinade over them.
- Bake the chicken for 25-30 minutes until cooked through.
- Rinse the jasmine rice under cold water until clear.
- In a medium pot, combine rinsed rice and coconut milk. Bring to a boil.
- Reduce heat to low, cover, and simmer for 15-20 minutes.
- Let the chicken rest for a few minutes before slicing.
- Serve the sliced chicken with coconut rice, garnished with green onions and sesame seeds.
