  • 1 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 1/2 cup pure maple syrup
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add in the maple syrup, egg, and vanilla extract. Mix until well combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Don’t overmix!
  • If desired, fold in chopped nuts or chocolate chips at this point.
  • Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, but they’ll set while cooling.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
