  • 4 bone-in pork chops (about 1 inch thick)
  • 4 slices bacon (chopped)
  • 1 tablespoon olive oil
  • 1/2 cup heavy cream
  • 1/4 cup Dijon mustard
  • 1/4 cup pure maple syrup
  • Salt and pepper (to taste)
  • Fresh parsley (chopped, for garnish)

Instructions

  • Start by heating a large skillet over medium heat. Add the chopped bacon and cook until crispy, about 5-7 minutes.
  • Once the bacon is cooked, remove it from the skillet and set aside, leaving the grease in the pan.
  • Season the pork chops with salt and pepper. In the same skillet, add olive oil and increase the heat to medium-high.
  • Add the pork chops and sear for 4-5 minutes on each side until golden brown. They should reach an internal temperature of 145°F (63°C).
  • Once cooked, remove the pork chops from the skillet and set aside.
  • Lower the heat and add the heavy cream, Dijon mustard, and maple syrup to the skillet. Stir well to combine and bring to a gentle simmer.
  • Return the pork chops and bacon to the skillet, allowing them to soak in the sauce for 2-3 minutes.
