- 4 cups fresh baby spinach
- 1 whole ripe mango, diced
- 1/2 cup red onion, thinly sliced
- 1/4 cup sliced almonds
- 1/4 cup feta cheese (optional)
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- to taste salt and pepper
Instructions
- Wash the baby spinach under cool water and pat dry.
- Peel and dice the ripe mango.
- Slice the red onion thinly.
- In a large salad bowl, combine spinach, mango, and onion.
- Add sliced almonds and feta cheese.
- Whisk together olive oil, balsamic vinegar, salt, and pepper.
- Drizzle dressing over the salad just before serving.
- Toss gently to combine and serve immediately.
