- 2 whole ripe mangoes (diced)
- 4 cups green cabbage (shredded)
- 1 cup carrots (grated)
- 1/2 cup red bell pepper (chopped)
- 1/4 cup fresh cilantro (chopped (optional))
- 1/2 cup plain Greek yogurt
- 2 tablespoons honey
- 1 whole lime (juiced and zested)
- to taste salt and pepper
Instructions
- Start by preparing the honey lime cream. In a bowl, mix Greek yogurt, honey, lime juice, and lime zest until smooth. Set it aside.
- In a large mixing bowl, combine the shredded cabbage, grated carrots, diced mangoes, and chopped bell pepper.
- Add the chopped cilantro if using. Toss everything together until well mixed.
- Season with salt and pepper to taste. Adjust according to your preference.
- To serve, divide the slaw among bowls and drizzle generously with the honey lime cream.
- Enjoy immediately or let it chill for 30 minutes for the flavors to meld.
