  • 1 large ripe mango (diced)
  • 1 cup fresh blueberries
  • 1/4 cup red onion (thinly sliced)
  • 1/4 cup feta cheese (crumbled (optional))
  • 1/4 cup walnuts or pecans (chopped (optional))
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper (to taste)

Instructions

  • Start by washing the spinach thoroughly. Remove any tough stems and dry the leaves using a salad spinner or paper towels.
  • Next, dice the mango into bite-sized pieces. You want them to be sweet and ripe, so choose a mango that gives a little when you press it gently.
  • In a large bowl, combine the spinach, diced mango, blueberries, and sliced red onion. If you're adding feta or nuts, toss them in as well.
  • In a small bowl or jar, whisk together the olive oil, balsamic vinegar, salt, and pepper. This dressing is simple but adds a wonderful depth of flavor.
