- 2 ripe mangoes (peeled and diced)
- 1 cup coconut cream (chilled for best results)
- 2 tablespoons honey or maple syrup (optional, depending on mango sweetness)
- 1 teaspoon vanilla extract
- 1 tablespoon lime juice
- fresh mint leaves for garnish
- toasted coconut flakes for topping
Instructions
- Prepare your ingredients. Peel and dice the mangoes, and chill the coconut cream for at least an hour.
- In a mixing bowl, combine the chilled coconut cream, honey (or maple syrup), vanilla extract, and lime juice. Whip until smooth.
- Layer the bottom of your dessert cups with coconut mixture.
- Add a layer of diced mango on top, followed by another layer of coconut mixture.
- Repeat the layers until you fill the cups, finishing with mango on top.
- Garnish with toasted coconut flakes and fresh mint leaves.
- Chill in the refrigerator for at least 30 minutes before serving.
