These tropical dessert cups combine the sweetness of mango with the creaminess of coconut for a refreshing treat.

  • 2 ripe mangoes (peeled and diced)
  • 1 cup coconut cream (chilled for best results)
  • 2 tablespoons honey or maple syrup (optional, depending on mango sweetness)
  • 1 teaspoon vanilla extract
  • 1 tablespoon lime juice
  • fresh mint leaves for garnish
  • toasted coconut flakes for topping

Instructions

  • Prepare your ingredients. Peel and dice the mangoes, and chill the coconut cream for at least an hour.
  • In a mixing bowl, combine the chilled coconut cream, honey (or maple syrup), vanilla extract, and lime juice. Whip until smooth.
  • Layer the bottom of your dessert cups with coconut mixture.
  • Add a layer of diced mango on top, followed by another layer of coconut mixture.
  • Repeat the layers until you fill the cups, finishing with mango on top.
  • Garnish with toasted coconut flakes and fresh mint leaves.
  • Chill in the refrigerator for at least 30 minutes before serving.
