- 2 ripe mangoes (diced)
- 2 ripe avocados (diced)
- 1 large cucumber (diced)
- 1/4 cup red onion (finely chopped)
- 2 tablespoons lime juice (freshly squeezed is best)
- 1 tablespoon olive oil
- to taste salt and pepper
- optional fresh cilantro or mint (for garnish)
Instructions
- Start by prepping all your ingredients. Dice the mangoes, avocados, and cucumber, and finely chop the red onion.
- In a large mixing bowl, combine the diced mango, avocado, cucumber, and red onion.
- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper until well combined.
- Pour the dressing over the salad mixture and gently toss everything together. Be careful not to mash the avocado.
- Let the salad sit for about 10 minutes to allow the flavors to meld.
- Serve chilled or at room temperature, garnished with fresh cilantro or mint if desired.
