- 8 oz cooked lobster meat (chopped)
- 4 slices sourdough or favorite bread
- 4 slices sharp cheddar cheese
- 2 tablespoons unsalted butter
- 1 tablespoon mayonnaise (optional)
- Salt and pepper (to taste)
- Lemon wedges (for serving)
Instructions
- Preheat your skillet over medium heat.
- In a bowl, mix chopped lobster meat with mayonnaise, salt, and pepper.
- Butter one side of each slice of bread.
- Place two slices in the skillet, unbuttered side up, and layer cheese, lobster mixture, and another slice of cheese.
- Top with the remaining bread slices, buttered side up.
- Cook for 3-4 minutes until golden brown, then flip and cook the other side for another 3-4 minutes.
- Once both sides are golden and cheese is melted, remove from heat and serve.
