Lobster Grilled Cheese Sandwich

  • 8 oz cooked lobster meat (chopped)
  • 4 slices sourdough or favorite bread
  • 4 slices sharp cheddar cheese
  • 2 tablespoons unsalted butter
  • 1 tablespoon mayonnaise (optional)
  • Salt and pepper (to taste)
  • Lemon wedges (for serving)

Instructions

  • Preheat your skillet over medium heat.
  • In a bowl, mix chopped lobster meat with mayonnaise, salt, and pepper.
  • Butter one side of each slice of bread.
  • Place two slices in the skillet, unbuttered side up, and layer cheese, lobster mixture, and another slice of cheese.
  • Top with the remaining bread slices, buttered side up.
  • Cook for 3-4 minutes until golden brown, then flip and cook the other side for another 3-4 minutes.
  • Once both sides are golden and cheese is melted, remove from heat and serve.
