Ingredients

  • 4 slices of crispy bacon, chopped
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 2 medium potatoes, peeled and diced
  • 4 cups of corn (fresh or frozen)
  • 4 cups of chicken broth
  • 1 cup of heavy cream
  • 1 lb of cooked lobster meat, chopped
  • Salt and pepper, to taste
  • 2 tablespoons of fresh parsley, chopped (for garnish)

Instructions

  1. Cook the bacon in a large pot until crispy, then remove and set aside, leaving the grease.
  2. Sauté the onion until translucent, then add garlic and cook for 1 more minute.
  3. Add potatoes and corn, stirring for 2 minutes.
  4. Pour in chicken broth, bring to a boil, then simmer for 15-20 minutes until potatoes are tender.
  5. Stir in heavy cream and simmer for another 5 minutes.
  6. Fold in lobster meat and warm for 2-3 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with bacon and parsley.
