- 4 slices of crispy bacon, chopped
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 2 medium potatoes, peeled and diced
- 4 cups of corn (fresh or frozen)
- 4 cups of chicken broth
- 1 cup of heavy cream
- 1 lb of cooked lobster meat, chopped
- Salt and pepper, to taste
- 2 tablespoons of fresh parsley, chopped (for garnish)
Instructions
- Cook the bacon in a large pot until crispy, then remove and set aside, leaving the grease.
- Sauté the onion until translucent, then add garlic and cook for 1 more minute.
- Add potatoes and corn, stirring for 2 minutes.
- Pour in chicken broth, bring to a boil, then simmer for 15-20 minutes until potatoes are tender.
- Stir in heavy cream and simmer for another 5 minutes.
- Fold in lobster meat and warm for 2-3 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with bacon and parsley.
Notes
- Adjust seasoning based on preference, especially due to the saltiness of the bacon.
- Use fresh lobster for the best flavor.
