- 1/2 cup sliced bell peppers (red and yellow for color)
- 1/2 cup sliced tomatoes
- 1/4 cup red onion, thinly sliced

Instructions
- Wash and slice all vegetables.
- Assemble sandwiches with buttered bread, cheese, spinach, bell peppers, tomatoes, onions, and another slice of cheese.
- Cook in a skillet over medium heat for 3-4 minutes on each side until golden brown and cheese is melted.
- Serve hot, sliced in half, with a dipping sauce or side salad.
