  • 2 bags frozen waffle fries (about 24 oz each)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can (15 oz) black beans (rinsed and drained)
  • 1 cup diced tomatoes (fresh or canned)
  • 1/2 cup sliced jalapeños (pickled or fresh, depending on your heat preference)
  • 1 cup sour cream
  • 1/2 cup guacamole
  • 1/4 cup chopped green onions
  • 1 tablespoon taco seasoning (optional)
  • 1 cup fresh cilantro (for garnish, optional)

Instructions

  • Preheat your oven according to the package instructions for the waffle fries (usually around 425°F).
  • Spread the frozen waffle fries evenly on two baking sheets. Bake them for about 20 minutes or until they are golden brown and crispy. Make sure to flip them halfway through for even cooking.
  • Once the fries are done, remove them from the oven and sprinkle the cheddar and Monterey Jack cheese evenly over the fries.
  • Return the baking sheets to the oven for another 5-7 minutes, or until the cheese is melted and bubbly.
  • While the cheese is melting, prepare your toppings: rinse the black beans, chop the tomatoes, and slice the jalapeños.
  • Once the cheese is melted, take the fries out of the oven and immediately top them with black beans, diced tomatoes, jalapeños, and taco seasoning if you’re using it.
  • Drizzle sour cream and guacamole on top. Finish with a sprinkle of green onions and cilantro.
  • Serve immediately while hot and gooey! Enjoy with friends and family!
